Hello & Happy Valentine’s Day. This weekend, my husband and I have been busy working on several projects, including this new recipe in the kitchen.
My husband, Will, had his Air Force PT test this past Friday and passed with a 94! In preparation for the test, he’s been watching his meals and eating very healthy. As a reward for doing so well on the test, we decided to have a “waffle day” (all meals in waffle form). For breakfast, we had whole wheat waffles with a mixed berry compote and Nutella. For lunch, I was too full to eat anything. For dinner, we made the pizza waffles shown below. We had leftover pizza dough in the freezer, that we pulled out to thaw. Our first attempt, we laid the dough in the waffle iron, added sauce, cheese, pepperoni and mushrooms; it was good, but we wanted to tweak the recipe a little. Will suggested leaving the sauce off, and keeping the dipping bowl on the side. It worked, and we were very happy with our tasty dinner on a cold, Ohio winter night.
